OR: The Easiest Cookies in the World
I happened to have red velvet cake mix. I was going to a Redskins-Cowboys game watching party. I realized red velvet was SO the right color for a Redskins game. But I wanted to make red velvet cookies out of the cake mix because cookies are way more fun than cake. A quick search revealed that this is indeed a thing (“cake mix cookies”), so I set out to make it happen. (Alternatively, it turns out I could have just read the side of the box because there’s a recipe there. Oops. :) ) Once again, these received rave reviews from all the omnis watching the game with me – as I was saying to people at a vegan meetup dinner before the game, food is always the best form of activism. :) I was told they were “fabulous”, “amazing”, and one person even grabbed them and cuddled up on the couch with them. That may be going a bit far, but hey, who am I to judge! :)
Red Velvet Cookies
So quick and easy, these should work with any cake mix and icing flavor combination that’s calling to you.
1 box red velvet cake mix
1 can vanilla frosting
1/2 t baking powder
2 T soy milk
2 Ener-G eggs (1 1/2 t Ener-G plus 2 T water per egg – beat together well with a fork)
1/2 C canola oil
1. Preheat the oven to 375.
2. Add all ingredients to the bowl of a stand mixer. Mix well to fully combine.
3. Spoon onto ungreased non-stick cookie sheet, in scoop sizes that would be about an inch around if you formed them into balls. Place at least 2″ apart.
4. Bake for 9-10 minutes.
5. Let cookies cool on pan for 2 minutes before removing to cooling racks.
6. Allow cookies to completely cool before icing. Either just ice the tops of all of them, or ice the tops of half and form cookie sandwiches. Or make a combo pack, like I did. :)

Notes:
- Duncan Hines is your friend here. Many of their cake mixes and icings are accidentally (not so accidentally really after an uproar from the Jewish community when they added in dairy so they decided to remove it again) vegan.
- If you like a chewy cookie but overcook yours a little like I did and end up with totally crunchy cookies – put in a tin overnight with a piece of bread and they will become perfectly soft.
