I served this at a party this weekend, to reviews of every single person saying “You made the dip? Wait – it’s vegan? It’s delicious!” The best advocacy is through good food right? :D Spinach dip that is SO easy, delicious, and healthy without the dairy that would usually weigh down this veg friendly dish. Plus serve with sides of cut-up veggies and get all those nutrients too. Such a winner.
Healthy Spinach Dip
Ingredients
- 1 12 oz package of silken tofu
- 10 oz chopped frozen spinach, thawed
- 1/4 C vegan mayo
- 1 t salt
- 1 t onion powder
- 1 t turmeric
- 1 t dried parsley
- 1 t dried dill
- 1 t lemon juice
- 1 t apple cider vinegar
Instructions
- Place all ingredients except spinach in a food processor, blend until smooth. (You can skip this step if you want, will just leave the tofu more chunky and less smooth like a traditional spinach dip.)
- Scoop out of food processor into a large bowl, mix in spinach.
- Serve with cut up veggies.
- Enjoy!!
