Alright this one is really obscure, and I have yet to find it myself to cook with, but everyone must know about jackfruit. This post will be short, but I wanted to make sure I mentioned it, because wow! A lot of people haven’t heard about jackfruit, and everyone should. :)
Jackfruit is this amazing fruit of a species of mulberry tree that grows in tropical regions and is native to South and Southeast Asia. The ripe jackfruit is naturally a bit sweet, and used in dessert dishes, but the young unripe jackfruit – that’s what vegans should know about, because of its texture. It is uncannily like chicken, so it makes a wonderful totally natural plant substitute for chicken. I’ve had it once, in an Indian curry dish, and it was so like chicken it was hard for me to believe it wasn’t chicken! I can’t wait to find it to cook with myself. I love being able to replicate that feeling 100% naturally – plus you get the bonus that, as with all plant foods, jackfruit is filled with a plethora of nutrients – vitamins, minerals, antioxidants, phytonutrients… the list goes on.

I made jackfruit tacos once before – the husband didn’t dig the texture, which is too bad, because I loved them! And you can’t beat the fact that, calorie-wise, it’s practically celery.
Wow really? The texture was exactly like chicken to me – but I can totally see not liking that texture, so I guess that makes sense. You’ll just have to make some for friends instead. :)
BBQ Jackfruit sandwiches are so good! The chef at my favorite restaurant, FÜD, can work magic with jackfruit and has so many tasty dishes featuring it. I love how it’s so easy and versatile.
Man, now I’m definitely going to have to find it! That BBQ sandwich is looking so good…. Can’t wait to try using it. :)
