I woke up so excited to write this morning’s post, because I get to write about KALE! My favoritest. :) Ok, it may not actually be my favorite food, but as anyone who has been reading for a little while knows, I absolutely love it.
And for good reason. Kale is a nutritional powerhouse, and low fat and low calorie to boot. As we talked about in the post on leafy greens in general, nothing has more nutrient density per calorie than your dark leafy greens, and kale may just win for the top of all the leafy greens. The best of the best. :) If you want to see how two of them compare, Prevention magazine put together a great graphic of kale vs spinach, claiming that kale wins the battle. Of course, spinach isn’t exactly lacking. :)
I could ramble on about the seemingly unending benefits of kale, being an exceptional source of Vitamin A, C, K, calcium, iron, protein… but this graphic does a great job, so I’ll let it show you just how wonderful kale is:

Recipes
1. I have to start with my top favorite recipe, just because I’m so proud of them – kale donuts. Tried by a few people now and everyone has success and absolutely loves them. They are exceptionally filling, and, amazingly, make for a hearty, healthy breakfast!
2. Back to basics – one of the easiest, simplest ways to prepare kale is in a massaged kale salad. It’s also a particularly healthful way, as lemon helps enhance the phytonutrients, so it’s a win-win!
3. A post about kale would not be complete with a recipe for kale chips. Kale chips are unbelievably delicious, and make for a snack that feels like such a treat – and yet you are consuming all those healthy nutrients at the same time. I’ve stuck with Amber’s basic recipe over at Almost Vegan – one of these days I’ll venture out and try all of her creative varieties!

It makes me sad to think about kale, though, since I only got two small bunches in all 20 weeks of my organic CSA, boo!

Aw, I know how feel. I don’t think I got any kale from my CSA, and I was just thinking how few greens we got this year.
